Ingredients:
2 pounds of organic potatoes
4 tablespoons of butter
Salt and pepper to taste
Instructions:
Place the potatoes in a large pot of cold water. Bring the water to a boil, then reduce the heat to a simmer and cook the potatoes until they are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Melt the butter in a small bowl or cup. Add the butter to the pot and use a potato masher or electric mixer to mash the potatoes until they are smooth.
Season the mashed potatoes with salt and pepper to taste. Serve the mashed potatoes hot, garnished with additional butter or chopped herbs if desired.
Note: You can also add other ingredients to your mashed potatoes, such as shredded cheese, cooked onion or peppers, or chopped chives. Experiment with different variations to find the combination that you like best!
