Seasoned White BASMATI RICE w/Sautéed VEGGIES,Vegan SAUSAGE & Chutney (Recipe)

Here’s a step-by-step recipe for Seasoned White Basmati Rice with Sautéed Plant-Based Sausage, Asparagus, Carrots, Mushrooms, and Red Onions served with Chutney:

Ingredients:

2 cups white basmati rice
4 cups water and vegetable broth mix
2-3 tsp olive oil
1 tsp salt
1 tsp black pepper
1 cup red onion, diced
3 cloves of garlic, minced
1 cup sliced mushrooms
1 cup sliced carrots
1 handful of asparagus
A pack of plant-based sausage links , sliced
1/2 cup Organic Green chutney

Instructions:

Rinse the rice in a fine mesh strainer until the water runs clear.
In a medium saucepan, bring the water and vegetable broth mix to a boil.
Add the rinsed rice, stir well, reduce the heat to low and cover the pan with a tight-fitting lid.
Cook for 18-20 minutes or until the rice is tender and all the liquid has been absorbed.
Remove from the heat and let it sit for 5 minutes. Fluff with a fork and set aside.
In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add minced garlic and sliced onion . Sauté for 2-3minutes or until softened.
Add the sliced mushrooms, carrots Sauté for 5-7 minutes or until the vegetables are tender and slightly browned.
In a separate pan add 1tsp of olive oil and the sliced plant-based sausage and sauté for 5-7 minutes or until heated throughly.
Asparagus should be in an oil free pan first, heat on medium- high, let pan get hot. Add asparagus stir for about 1-2 mins until it starts to brown . Add a touch of oil, salt and pepper and stir for an additional 1 -2 mins (season to taste)
Serve the sautéed vegetables and sausage over the cooked rice , side of asparagus and top with chutney.
