* 1 pound ground plant based meat (Impossible Brand used for this video)
* 1 cup diced vegetables (such as bell peppers, onions, and mushrooms)
* 1 clove garlic, minced
* 1 cup white rice
* 2 tablespoons hoisin sauce
* 1 tablespoon soy sauce
* Salt and pepper, to taste
* Lettuce leaves, for wrapping
Instructions:
POT (Rice)
1. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. This helps to remove excess starch and dirt from the rice.
2. Add the rice to a pot and cover it with cold water. The general rule of thumb is to use 2 cups of water for every 1 cup of rice.
3. Bring the water to a boil over high heat, then reduce the heat to low and cover the pot with a tight-fitting lid.
4. Simmer the rice until it is tender and the water has been absorbed, which should take about 18-20 minutes for white rice and 40-45 minutes for brown rice.
5. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for about 5 minutes. This allows the rice to steam and finish cooking.
6. Fluff the rice with a fork and serve.
FRYING PAN (Meat/Peanut Sauce)
1. In a pan over medium heat, cook the ground meat until it is browned and fully cooked.
2. Add the diced vegetables to the pan and cook until they are tender.
3. Stir in the minced garlic, hoisin sauce, and soy sauce. Season with salt and pepper to taste.
4. To serve, spoon a portion of the meat and vegetable mixture onto a lettuce leaf and roll it up like a burrito. Repeat with the remaining ingredients.
5. Enjoy your lettuce wraps immediately, or refrigerate them for a quick and easy lunch option.
